Perched on the end of a public pier with a panoramic bay view on Newport’s historic Bayfront, Saffron Salmon showcases northwest cuisine utilizing local and fresh ingredients. The cuisine at Saffron Salmon asserts itself as stylish and pared-back, inspired by the abundant local seafood. All  sauces, stocks, dressings and desserts at Saffron Salmon are made from scratch. Quality ingredients are a must at Saffron Salmon. The staff uses only wild salmon from the west coast, meaning the fish is usually local and fresh whenever possible and troll caught by reputable fishermen.

Saffron Salmon buys live Dungeness crab from the fishing vessel Winter Hawk when in season, and the staff pick the meat themselves to ensure quality and freshness. Saffron Salmon also utilizes a local fisherman, Clint Funderburg of Island Wild Seafoods, to provide excellent fish from the waters of the tropical Pacific Ocean. The pasture-raised chicken is from Walker Farms of Siletz, Oregon. Saffron also makes use of the farmers’ market during the summer months, along with other local vendors.


Saffron Salmon is open Thursday through Tuesday and is closed on Wednesday.
